Food and beverage AI adoption is outrunning governed enterprise access
TraceGains research suggests informal AI use is expanding faster than approved enterprise deployment in regulated food workflows.
TraceGains surveyed 423 food-and-beverage professionals and found that only 41% reported formal enterprise AI use, while respondents identified trust, security, regulation and disconnected systems among the leading constraints.
The gap is especially material in regulated workflows involving formulation, supplier data, quality and compliance. Prohibiting unapproved tools does not by itself produce a usable governed alternative. Approved AI must connect to authoritative specifications, supplier records and regulatory data at task level.
The principal failure mode is a choice between unmanaged shadow AI and a compliant enterprise tool disconnected from the information required to make reliable decisions.
